Looks can be deceiving

Hale to the Kale!




For such a harsh and coarse appearance, kale can be intimidating to grab at the store or want to cook. However, we all know it's benefits are truly amazing and make for some super tasty, healthy eating.

So here's my stab at a quick kale medley, of sorts...

-1 bunch kale raw
-1/2 acorn squash
-1/2 cup or 3/4 red onion
-1/2 can or 3/4 of white kidney beans
-1 cup raw walnuts, more or less your call
-shaved parmesan, whatever you dig
-1 big salad bowl
-homemade balsamic, but really any dressing of your choice

Take one bunch of kale, remove the spines and rinse thoroughly in salad spinner, massage it before spinning. Once spun throw it in salad bowl.
Prior to cleaning the kale, cut acorn squash in half, salt and pepper both sides cook in oven for 45 minutes to one hour at 400 degrees face down in pan with about 2/3 inches of water. When done, drain water and cook a few more minutes face up. Let cool for about 15 minutes. Take a knife and dice them, like you would an avocado, inside the skin making horizontal and diagonal slices to create little squares. They won't come off skin perfectly but it doesn't matter, they're ready to go in salad bowl but you may want to do this step last.
Before the squash goes in cut the red onion, any way you like and throw in salad bowl.
Rinse and drain the white kidney beans, throw in salad bowl.
Toast the raw walnuts (put them in oven while cooking the squash) for about 15 minutes or less depending on your oven. When done chop and put in salad bowl.
Lastly, sprinkle on lots of parmesan and top with a dressing, my suggestion below.

homemade balsamic dressing
-1 garlic clove sliced once
-1 healthy tablespoon dijon mustard, or any mustard
-1 teaspoon and maybe a splash or two more of rice wine vinegar

-2 tablespoons or a few splashes more of balsamic vinegar
-2 teaspoons brown sugar
-lots of ground pepper
-pinch of salt
-some lemon (optional)

Mix all ingredients in cup or small bowl and whisk, discard garlic before dressing the kale medley

Accompany this with fish or meat for a heartier meal or roll it up in a tortilla, it's all good.

Nursing and noshing...

To Wheat or Not? 





A little can go a long way and there are lots of ways to substitute wheat.

For all those nursing moms, who aren't celiacs, here's a healthy fix that cuts the wheat without cutting flavor. My husband even gave it a thumbs up!

This muffin recipe came from Farmgirlfare.com but I made lots of tweaks to it. Tweak for yourself and enjoy!

-2 cups organic wheat bran ( I did 1 cup wheat bran and 1 cup flax but you could do all flax)
-1 cup organic oat bran (I did this but you could substitute it for flax as well)
-1 cup organic whole wheat flour (I did 1/2 cup Whole Wheat flour and 1/2 cup Almond Meal, which you can do all almond meal if you want)
-2 teaspoons baking soda
-1 teaspoon baking powder
-1/2 teaspoon salt
-2 large organic eggs
-2/3 cup 1% organic milk
-2/3 cup straus organic whole milk plain yogurt
-1/3 cup safflower oil (substituted with my homemade apple sauce*, see ingredients below)

-1/3 cup sweet molasses or cane syrup (did not use)
-1/3 cup honey (did 2/3 cup honey)
-1 teaspoon pure vanilla extract (optional)

-1 1/2 cup frozen blueberries, easier if frozen to mix in and just as delicious 
-1/3 plus cups millet thrown in for a little extra yumminess
**homemade applesauce, 2 organic pink lady apples blanched then blended with half cup water and as much cinnamon as you like, let it cool then throw a banana in there and blend some more-YUM!

Combine all the dry ingredients; the wheat bran, oat bran, whole wheat flour, baking soda, baking powder, cinnamon, and salt in a large bowl and set aside.

Combine all the wet ingredients; the eggs, milk, yogurt, safflower oil, molasses, honey, and vanilla in a small bowl and mix well.

Then take both and mix with a rubber spatula until combined. Gently fold in frozen blueberries or raisins or I even cut up dark chocolate and made a few of them with that. Use a muffin pan or muffin cups, and generously overfill them with batter. Cook at 375 degrees for about 25-30 minutes or until a toothpick can be inserted and then removed without any muffin mix, just clean. YUM!

Get the Skinny...

Pear your style with good taste!


Stylish D'Anjous...

By default, I'm learning to cook these days, while blending, mixing, and grinding up foods for my baby girl. One of my favorite blends I mix for her is pear, blueberry, and banana. This morning I decided to add a few extra items for my own personal blend and this is what I came up with...

-a D'anjou pear, peeled, slices and give core to dog (mine loves these and apple cores, hope it's ok;-/)
-spinach, 1 cup frozen
-a handful of rinsed blueberries
-one half to 3/4 of a banana
-one healthy pour of tangerine juice
-and coconut water, probably about a cup and a half, depends on the thickness you desire.
**I'd use Zico, it has nothing but 100% pure coconut water. There are a lot of coconut waters out there with added ingredients

Voila, you have a delicious, healthy, easy to make smoothie. Good anytime of day. If your nursing, like I am, trust me you'll need one!
